At 5am, the air in Nine Elms is sharp and cold. This is the heart of London’s food rhythm: New Covent Garden Market. While the city’s cafes are just starting to warm their machines, we’re navigating the aisles of the fruit and vegetable pavilions.
This isn’t just about buying produce; it’s about the selection.
The Selection Standard
Most vegetables don’t make the cut. To be part of The Daily Crunch, a carrot isn’t just a carrot. It has to have the right snap. A cucumber needs to be firm and vibrant, with that specific morning dew still clinging to its skin.
Our criteria are simple but strict:
- Texture: If it doesn’t snap, it doesn’t go in the box.
- Color: Naturally vibrant. No dull bell peppers.
- Freshness: Sourced today, delivered today.
From Market to Box
By 7am, our van is loaded and heading back to our preparation space. We don’t use industrial machines. Every vegetable stick is hand-cut to preserve the cell structure and ensure that maximum crunch.
It’s a labor-intensive process, but in a city that moves as fast as London, we believe the slow, careful preparation of real food is a ritual worth keeping.
